Parmesan Zucchini Sticks

These seasoned zucchini sticks are seared lightly in an oven, and a sprinkling of parmesan cheese forms a toasty crust. The resulting sticks are firm enough to eat with your fingers, like French fries, making them ideal for serving to kids and adults alike.

Ingredients

  • 2 medium zucchini
  • 2 tablespoons extra virgin olive oil
  • 1/2 teaspoon paprika
  • 1/2 teaspoon dried thyme
  • 1/2 teaspoon salt
  • 1/4 cup shredded parmesan cheese

Preparation

  1. Preheat oven to 425 F.
  2. Place a baking rack on a large, rimmed sheet pan.
  3. Slice each zucchini in half, lengthwise, then slice each half into long wedges, leaving a ½-inch-wide strip of skin on each, by aiming the knife at an angle toward what was the center of the zucchini.
  4. Place the zucchini slices in a large bowl, then drizzle with oil, sprinkle with paprika, thyme and salt, and toss to coat. Sprinkle with half of the parmesan cheese and toss to coat.
  5. Arrange the zucchini slices on the baking rack, skin side down, with a little space between them. Sprinkle the remaining parmesan carefully on the slices, covering them evenly.
  6. Bake for 25 minutes, until the cheese is lightly browned.

Tips and Notes

Try making these in an air fryer for extra crispy zucchini sticks.
