Canapes with Smoked Salmon and Fresh Herbs
If you want to entertain with a moment's notice, keep some lox, crackers and fresh herbs on hand to put these easy canapes together. For a little extra flourish, add a dab of sour cream on top of each one.
- 16 large pumpernickel crackers, melba toasts, or Scottish oat crackers
- 1/2 cup fresh basil leaves
- 4 ounces sliced, smoked lox, chopped
- Chives, for garnish
Roughly chop the basil. Place crackers on a serving platter, and top with a pinch of basil, then about 1/4 ounce of the lox. Garnish with sliced chives and serve.
