Santa Fe Black Bean Salad

A cumin, cilantro and lime dressing gives this easy salad a distinctly Southwestern flavor.

Ingredients

Dressing

  • 1/4 cup vegetable oil
  • 1/4 cup fresh lime juice
  • 2 tablespoons fresh cilantro, finely chopped
  • 1 teaspoon ground cumin
  • 1/2 teaspoon salt
  • 1/4 teaspoon cayenne pepper (optional)

Salad

  • 1 (15-ounce) can black beans, drained and rinsed (or 2 cups dried beans, soaked and cooked)
  • 1 cup fresh or canned corn kernels
  • 1/2 cup green bell pepper, diced
  • 1/2 cup red bell pepper, diced
  • 1/2 cup red onion, diced

Preparation

  1. In a medium bowl, whisk together the oil, lime juice, cilantro, cumin, salt, and cayenne pepper.
  2. Toss the vegetables with dressing and let stand at room temperature for 30 minutes, mixing occasionally. Season to taste, adding more lime juice if desired.
