Ingredients
Mushrooms
- 1 pound white button mushrooms
- 1 quart water
- 1/2 teaspoon garlic, peeled and smashed
- 1 tablespoon lemon juice
- DRESSING
- 3 tablespoons balsamic vinegar
- 3 tablespoons vegetable oil
- 1 tablespoon fresh basil, chopped
- 1/4 teaspoon garlic, minced
- 1/2 teaspoon tamari or soy sauce
- Pinch of salt and freshly ground white pepper
Preparation
- To prepare the mushrooms: In a large pot, bring water, lemon juice, and garlic to a boil. Add mushrooms and return to a boil, poaching for 5 minutes, or until tender. Remove from heat and drain. Cool in the refrigerator for at least an hour.
- To make the dressing: Whisk all ingredients together and set aside.
- In a large mixing bowl, toss mushrooms with dressing and let stand 30 minutes to allow flavors to develop and dish to come to room temperature.
Tips & Notes
Make Ahead Tip: Mushrooms and dressing can be made one day ahead and stored separately in the refrigerator, then tossed together half an hour before serving.
