Garlic-Poached Mushrooms with Balsamic Vinaigrette

Ingredients

Mushrooms

  • 1 pound white button mushrooms
  • 1 quart water
  • 1/2 teaspoon garlic, peeled and smashed
  • 1 tablespoon lemon juice
  • DRESSING
  • 3 tablespoons balsamic vinegar
  • 3 tablespoons vegetable oil
  • 1 tablespoon fresh basil, chopped
  • 1/4 teaspoon garlic, minced
  • 1/2 teaspoon tamari or soy sauce
  • Pinch of salt and freshly ground white pepper

Preparation

  1. To prepare the mushrooms: In a large pot, bring water, lemon juice, and garlic to a boil. Add mushrooms and return to a boil, poaching for 5 minutes, or until tender. Remove from heat and drain. Cool in the refrigerator for at least an hour.
  2. To make the dressing: Whisk all ingredients together and set aside.
  3. In a large mixing bowl, toss mushrooms with dressing and let stand 30 minutes to allow flavors to develop and dish to come to room temperature.

Tips & Notes

Make Ahead Tip: Mushrooms and dressing can be made one day ahead and stored separately in the refrigerator, then tossed together half an hour before serving.
